Ingredients
  

  • 1 cup whole wheat flour
  • 1/2 cup old-fashioned rolled oats
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine salt
  • 1 large ripe banana, mashed
  • 1/2 cup unsweetened applesauce
  • 1/3 cup plain Greek yogurt
  • 1 large egg
  • 2 tablespoons pure maple syrup
  • 2 tablespoons melted coconut oil or neutral oil
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled if desired and finely diced
  • 2 tablespoons chopped walnuts, optional

Instructions
 

  • Preheat the oven to 375°F and line or grease a 12-cup muffin pan.
  • Whisk flour, oats, cinnamon, baking powder, baking soda, and salt in a medium bowl.
  • Mash the banana until nearly smooth in a large bowl.
  • Whisk in applesauce, yogurt, egg, maple syrup, melted oil, and vanilla.
  • Fold the dry ingredients into the wet mixture until no dry streaks remain.
  • Stir in the diced apple and walnuts, if using.
  • Divide batter among muffin cups, filling each about three-quarters full.
  • Bake 18 to 22 minutes, until tops spring back and a toothpick has moist crumbs.
  • Cool in the pan for 5 minutes, then transfer muffins to a rack.

Notes

Use firm apples such as Honeycrisp, Fuji, or Granny Smith.
Avoid overmixing to keep the muffins tender.
Cool completely before storing to prevent sticky tops.
